Teak at Midnight: black tea, roasted plum and tonic

Roast plums at 375°F. Skins ride in the base 24 hours, then strain. Tonic at the pour. Dark chocolate with salted almonds, or a wedge of aged Gouda. Cascara is tart on top of tea. This is the no-alcohol pour. Serve it in the same glass as the cocktail.
