Frosted Glass: sencha, white grape, grapefruit and rosemary

Sencha at 165°F for ninety seconds, double leaf. Sparkling water at or below 40°F. Base one day; grapefruit turns soapy after that. Dry, pale and bitter on the same tray as a gin-and-fino. Nobody has to announce which glass is which. This is the no-alcohol pour. Serve it in the same glass as the gin drink.

What does not scale

Cooking time
Nothing cooks, so batch size does not change a cooking time. Chilling does not scale either — it is set by the depth of the container, so a double batch in one deep tub takes far longer than two shallow ones.
