Night record

Planning here works on its own. Once a night starts, it travels between the three tools by itself.

Cooking notes

Glass House: vodka, rose, lychee and celery

Stir vodka, vermouth and bitters 25 seconds. Ice off, then the lychee and rose. Frozen Nick and Nora. Cold crab, or cucumber and radish with butter and salt. Side with the celery, not the lychee.

Base recipe

This is the base recipe: one batch, 6 portions. Nothing has been scaled, because there is no committed plan for this dish. Build and commit a plan that includes it and this card multiplies itself to the batch count the plan computes.

Leftover route

Batch two days without the rose. Add rose per drink from a dropper.

Measured by eye in the original, and it stays that way at any batch size.

What does not scale

Multiplying the ingredients is the easy half. These are the parts of the recipe that the batch count does not move.

Cooking time
Nothing cooks, so batch size does not change a cooking time. Chilling does not scale either — it is set by the depth of the container, so a double batch in one deep tub takes far longer than two shallow ones.
Method
  1. Read the whole method before you shop. This is a planning recipe for glass house: vodka, rose, lychee and celery, not a certified kitchen test.
  2. Amounts below are one batch: 6 portions. Build a plan and this card scales itself to it.
  3. This dish can be completed up to 2 days ahead. Cold storage is the real limit — do not make it ahead if the fridge is already tight.
  4. No heat. Assemble from cold ingredients. Keep covered until service.
  5. Hold time is short (6 min). Finish close to service. Do not guess a longer hold.
  6. Leftover route: Batch two days without the rose. Add rose per drink from a dropper.
  7. Confirm every ingredient and every allergen yourself. Dietary tags are planning filters, not safety guarantees.
Make-ahead

Can be completed up to 2 days ahead. Fridge units: 1 per batch, so 1 batch takes about 1 shelf-thirds while it waits.

Scaling

Base recipe: one batch, 6 portions. Nothing has been scaled, because no plan was open. Cooking time does not move with the batch: about 0 minutes at the stove either way.

Not every line here was multiplied by the same number. Why doubling a recipe is not multiplication
