Questions hosts ask
How much cheese per person for a wine and cheese night?
If there is other food, plan about 85 g (3 oz) of cheese per guest. If cheese is the main event, as a rule of thumb plan about 115 to 140 g (4 to 5 oz) per guest in total, spread across your cheeses.
How many cheeses should I serve?
Four or five is ideal: something fresh, something soft, something firm, a blue, and one wild card. More than that becomes hard to taste properly.
How much wine for a tasting?
A 750 ml bottle gives about five full glasses or ten to twelve tasting pours. For a tasting of three or four wines, one bottle of each per five or six guests is usually enough.
How far ahead should cheese come out of the fridge?
About an hour before serving for most cheeses, so the flavour and texture come through. Keep boards covered while they come up to temperature.
